For the Salmon and Green Beans
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Rub the salmon with avocado oil and season to taste with lemon juice, salt, and pepper. Place in a baking dish, and bake for 15 to 18 minutes or until firm, opaque, and cooked through.
- Bring an inch of water to a boil in a large pot fitted with a steamer basket. Add the green beans, cover, and steam for 5 to 7 minutes (until tender/crisp). Move to a medium bowl and set aside.
- Add the pine nuts, basil, garlic, salt, and lemon juice to the bowl of a food processor. Pulse until finely chopped. While the machine is running, slowly drizzle in the olive oil and pulse until smooth and combined.
- Pour half of the pesto over the green beans, and toss until evenly coated. Serve the salmon with the green beans and extra pesto on the side.
