Dressing
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp pure maple syrup
  • 1/4 tsp sea salt
  • 1 pinch freshly ground black pepper
  • 2 tbsp chopped mint
Spring Greens and Strawberry Salad
  • 6 cups spring greens
  • 2 cups quartered strawberries
  • 1/4 cup thinly sliced scallions
  • 1 cup chopped macadamia nuts

Method
 

For the Dressing
  1. Whisk together the oil, vinegar, mustard, maple syrup, salt, pepper, and mint in a small bowl.
For the Salad
  1. In a large salad bowl, mix the spring greens, strawberries, scallions, and nuts. Drizzle the dressing around the rim of the bowl and toss to evenly coat everything. Serve and enjoy!
