
Egg Dip With Veggies
Delicious and creamy with great flavor from the Dijon, vinegar, and chives, this B vitamin–rich dip pairs perfectly with fresh spring veggies like snap peas and radishes.

Ingredients
- 6 hard-boiled eggs
- 1/4 cup avocado mayonnaise
- 1 tbsp Dijon mustard
- 1/2 tbsp apple cider vinegar
- Sea salt and pepper to taste
- 2 tsp chopped chives
- radishes for dipping
- snow or snap peas for dipping
Instructions
- Peel the shells from the boiled eggs and separate the egg whites from the yolks. Place the egg yolks in the bowl of a food processor fitted with the blade attachment. Chop the egg whites and place them in a medium bowl.
- In the food processor, add the mayonnaise, mustard, and vinegar, and blend until smooth. Transfer the egg yolk mixture to the bowl with the whites. Season with salt, pepper, and chives, and stir to combine. Serve with radishes and snow peas.
