Baked Apples

These tender and sweet warm apples topped with oats and walnuts are a mouthwatering dessert to help bring a nourishing end to your winter day.

Ingredients
  

  • 1 tbsp melted coconut oil
  • 1/4 cup old-fashioned rolled oats
  • 6 tbsp chopped walnuts
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp pure vanilla extract
  • 2 tbsp maple syrup
  • 4 organic, late-season apples, cored
  • 1/2 cup apple juice

Method
 

  1. Preheat the oven to 350°F. Place the apples in an 8 x 8-inch baking dish.
  2. Combine the coconut oil, oats, walnuts, cinnamon, nutmeg, vanilla, and maple syrup. Stuff the oat mixture into the center of each apple. Pour the apple juice into the bottom of the baking dish. Cover with foil and bake for 40 to 45 minutes or until the apples are very tender. Allow to cool for 15 minutes, then serve.
